Rothman Presidential Chair of Food Studies, the researchers have invented edible particles called microcarriers with customized structures and textures that help precursor <a href=\"https:\/\/phys.org\/tags\/muscle+cells\/\" rel=\"tag\" class=\"\">muscle cells<\/a> grow quickly and form muscle-like tissues. Edible microcarriers could reduce the expense, time, and waste required to produce cultured <a href=\"https:\/\/phys.org\/tags\/meat\/\" rel=\"tag\" class=\"\">meat<\/a> with a <a href=\"https:\/\/phys.org\/tags\/texture\/\" rel=\"tag\" class=\"\">texture<\/a> that appeals to consumers. The results are published in the journal Biomaterials.<\/p>\n<p>\u201cAnimal cells that can be coaxed to form tissues similar to meats could offer a protein source to a world facing <a href=\"https:\/\/phys.org\/tags\/food+insecurity\/\" rel=\"tag\" class=\"\">food insecurity<\/a> caused by threats ranging from epidemics to <a href=\"https:\/\/phys.org\/tags\/natural+disasters\/\" rel=\"tag\" class=\"\">natural disasters<\/a>,\u201d said Rowat, who is an associate professor of integrative biology and physiology at the UCLA College. \u201cCultured <a href=\"https:\/\/phys.org\/tags\/meat+products\/\" rel=\"tag\" class=\"\">meat products<\/a> are not yet on the market in the U.S. and strategies to enable <a href=\"https:\/\/phys.org\/tags\/mass+production\/\" rel=\"tag\" class=\"\">mass production<\/a> are still emerging.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Researchers at UCLA have created an edible particle that helps make lab-grown meat, known as cultured meat, with more natural muscle-like texture using a process that could be scaled up for mass production.
